Makes me excited about this upcoming final month and all we will see.

Through our Italian pilgrim buddies we were able to find an apartment in village center of San Germano Vercellese downstairs from theirs.

And they included an invitation to a home cooked dinner of pasta in pesto sauce and a fresh salad.

Barbara and Selene will soon be teachers and they gave me a lesson on grated cheese. I grew up in Chicago where we had a Kraft green can of grated Parmesan Cheese. Fresh Italian is a wee bit better.

Here in Italy Barbara explained they usually use different grated cheeses by region:
Parmiggiano (Parmesan) reggiano

Parma (Emilia Romagna) Grana padano

North Italy (Pianura padana: a group of regions)

Pecorino romano/toscano/etc.

Centre-south Italy Ricotta affumicata Calabria/Sicilia Provola Campania/Sicilia Provolone North Italy
Looking forward to trying them all.

The hostel here is closed until next year so for people that want to walk farther than the 17k Lake Viverone to Santhia stage San Germano is still an option.
