We walked through Champagne in late August and they were harvesting. 3 weeks ago they were harvesting in Aoste Valley.
Leftover grape peels or Pomace used for things like cream of tartar, grappa, animal feed, etc.

San Agostino Convent and ChurchSan Agostino
After touring San Agostino’s we tried a butcher shop/restaurant next door sitting outside in piazza. Had an incredibly good tagliere tray and steak tartare with 2 bottles of good wine. Took a rare nap afterwards.
